  • 1 large Sweet potato Choose ripe sweet potatoes that feel firm.
  • 4 slices Bacon Crispy bacon brings savory texture.
  • 2 large Eggs Use fresh eggs for better taste.
  • 1/2 cup Shredded cheese Choose your favorite cheese type for melty goodness.
  • 1 tsp Salt Season to taste.
  • 1/2 tsp Pepper Adjust according to your preference.
  • 2 tablespoons Chopped green onions For garnish.
  • 1 tablespoon Olive oil Adds richness and helps in cooking.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potato with a fork and place it in the oven. Bake for about 45 minutes or until tender.
  3. In a skillet over medium heat, cook the bacon until crispy. Once done, remove it from the skillet and drain on paper towels.
  4. Using the same skillet, crack the eggs and cook them to your liking.
  5. Once the sweet potato is baked, slice it open and fluff the insides with a fork.
  6. Crumble the bacon and add it to the sweet potato along with the cooked eggs and shredded cheese.
  7. Season the dish with salt and pepper. Garnish with chopped green onions if desired and serve hot.

Notes

Choose ripe sweet potatoes and fresh eggs for the best results. Don’t overcrowd the skillet while cooking.
