  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 piece lemon (juiced and zested)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
Herbs and Seasonings
  • 2 teaspoons fresh thyme (or 1 teaspoon dried)
  • 2 teaspoons fresh rosemary (or 1 teaspoon dried)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In a slow cooker, add the chopped onion and minced garlic.
  2. Place the chicken breasts on top and season with salt, pepper, lemon zest, and lemon juice.
  3. Sprinkle the thyme and rosemary over the chicken.
  4. Add the rice and chicken broth, stirring slightly to combine.
  5. Drizzle with olive oil.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and rice is tender.
  2. Fluff the rice before serving and enjoy your meal.

Notes

This dish is perfect on its own but can be enhanced with a side of steamed vegetables or a fresh salad. Garnish with additional lemon zest or fresh herbs for extra flavor.
