Ingredients
  

For the batter
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
Baking
  1. Bake for 12-15 minutes or until the tops are golden and spring back when touched.
  2. Let cool slightly before serving with your favorite toppings.

Notes

Pancake Poppers can be served warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
