  • 1.5 cups milk (or almond milk for dairy-free)
  • 1 large apple, diced Sweet apples such as Fuji or Honeycrisp work great.
  • 2 large eggs
  • 0.25 cups maple syrup or honey Feel free to add more for sweetness.
  • 1 tsp vanilla extract
  • 1 tsp cinnamon Experiment with other spices like nutmeg or pumpkin spice.
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.25 cups chopped walnuts or pecans (optional) You can also use almonds or hazelnuts.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or butter.
Mix the Ingredients
  1. In a large bowl, whisk together the eggs, milk, maple syrup (or honey), and vanilla extract.
  2. Stir in the oats, baking powder, cinnamon, and salt.
  3. Fold in the diced apples and nuts if using.
Bake
  1. Pour the mixture into the greased baking dish and spread it out evenly.
  2. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the center is set.
