  • 8 oz Spaghetti Use any type of pasta you prefer.
  • 2 cups Cooked and shredded chicken Use leftover or rotisserie chicken.
  • 2 tbsp Olive oil Choose extra virgin for a richer taste.
  • 1 Onion (diced) Use yellow or white onion.
  • 1 Bell pepper (chopped) Use any color you like.
  • 1 cup Mushrooms (sliced) Choose fresh for the best results.
  • 10.5 oz Cream of chicken soup Creates the creamy base.
  • 1 cup Sour cream Adds tang and creaminess.
  • 1 tsp Garlic powder Boosts the flavor.
  • 1 tsp Onion powder Adds a subtle onion flavor.
  • 1/2 cup Milk Use any milk you like, including non-dairy options.
  • 1 cup Monterey Jack cheese Use it in the sauce and for topping.
  • 1/2 cup Cheddar cheese Sharp cheddar adds rich flavor.
  • 2 tbsp Fresh parsley (chopped) For garnish.

Method
 

Preparation
  1. Boil the spaghetti according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and mushrooms. Sauté for 5-7 minutes until soft and slightly browned.
  3. Stir in cream of chicken soup, sour cream, garlic powder, onion powder, and milk. Cook for 2-3 minutes until smooth and heated through.
  4. Mix in cooked chicken and 1/2 cup of Monterey Jack cheese. Cook for another 2-3 minutes until cheese melts and chicken is warmed.
  5. Toss the cooked pasta into the skillet with the sauce. Mix well to coat.
  6. Preheat oven to 350°F (175°C). Transfer the pasta mixture to a greased 9x13-inch baking dish. Top with remaining Monterey Jack and cheddar cheese. Bake for 20-25 minutes until cheese is melted and bubbly.
  7. Garnish with fresh parsley and serve warm.

Notes

Tips: Use cooked chicken to save time, don’t overcook the pasta, and stir frequently to prevent sticking. Adjust cheese for extra creaminess. Store leftovers in an airtight container.
