  • 4 medium Tortillas Flour or corn tortillas.

Method
 

Preparation
  1. In a bowl, mix mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper until evenly mixed.
Filling the Tortilla
  1. Lay one tortilla flat. Place one-fourth of the filling mixture on one half of the tortilla. Fold the tortilla over to cover the filling.
Cooking
  1. Heat a non-stick skillet over medium heat and add a little olive oil.
  2. Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown on one side.
  3. Carefully flip the quesadilla and cook for another 3-4 minutes until both sides are crispy.
Serving
  1. Remove the quesadilla from heat, slice it into wedges, and serve warm.

Notes

Use fresh ingredients for the best flavor. Avoid overfilling to prevent difficulty in flipping. Adjust heat as necessary and let the quesadillas rest for a minute before slicing.
