Honey BBQ Chicken Rice

Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken thighs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
For the Rice
  • 1 cup long-grain rice
  • 2 cups chicken broth Use low-sodium for less salt
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • Chopped green onions for garnish
  • 1 cup mixed vegetables (optional)

Method
 

Preparation
  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In a bowl, mix the BBQ sauce, honey, and minced garlic.
Cooking
  1. In the same pan, toast the uncooked rice for 1–2 minutes.
  2. Add chicken broth and half of the sauce. Stir to combine.
  3. Return the chicken to the pan and pour the remaining sauce over the top.
  4. Cover and simmer on low heat for 15 minutes.
  5. Add mixed vegetables, cover, and cook for 5 more minutes or until the rice is tender and the chicken is cooked through.
  6. Let sit for 5 minutes. Garnish with green onions and serve hot.

Notes

Make sure to brown the chicken well for maximum flavor. Feel free to add your favorite vegetables or switch the chicken for tofu or shrimp. For extra flavor, you can marinate the chicken in the BBQ sauce and honey mixture for a few hours before cooking. To store leftovers, let them cool completely and place in an airtight container in the fridge for 3–4 days or freeze for up to 2-3 months.
