  • 1 lb chicken breast Lean protein
  • 2 medium sweet potatoes Diced
  • 1 cup rice Preferably long grain
  • 2 tbsp olive oil For roasting
  • to taste salt For seasoning
  • to taste pepper For seasoning
Optional Toppings
  • 1 ripe avocado Sliced
  • 1/4 cup cilantro Chopped
  • 1 lime lime wedges For serving

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Dice the sweet potatoes and toss with olive oil, salt, and pepper. Spread them on a baking sheet.
Cooking
  1. Roast sweet potatoes for 25-30 minutes until tender.
  2. While sweet potatoes roast, cook the rice according to package instructions. Fluff with a fork once done.
  3. Season the chicken breast with salt and pepper. Grill or pan-sear until cooked through, about 6-7 minutes per side.
Assembly
  1. In each bowl, place rice at the bottom. Top with roasted sweet potatoes and sliced chicken.
  2. Add optional toppings as desired. Serve warm.

Notes

Cut sweet potatoes evenly for even cooking. Let chicken rest before slicing for juiciness. Prepare sweet potatoes and rice ahead for quick meals. Adjust seasoning to taste.
