Preparation
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix the rolled oats, grated carrots, and optional walnuts or coconut.
- In another bowl, blend the mashed banana or applesauce, honey or maple syrup, cinnamon, nutmeg, salt, and baking powder.
- Pour the wet mixture into the dry ingredients and stir until well combined.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
Baking
- Bake for 15 to 20 minutes until the edges are golden brown.
- Allow cookies to cool for a few minutes before transferring them to a wire rack to cool completely.
Notes
Use ripe bananas for the best sweetness and moisture. Don’t skip the cinnamon for classic flavor. Ensure dough consistency is moist but not too sticky. Avoid overbaking for slightly soft centers.
