Ingredients
  

Chicken Marinade
  • 4 pieces Chicken breasts Boneless, skinless
  • 2 tablespoons Olive oil Extra virgin preferred
  • 2 cloves Garlic Minced
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper Black pepper
Toppings and Base
  • 1 cup Cucumber Diced
  • 1 cup Tomatoes Diced
  • 1/2 cup Red onion Chopped
  • 1/2 cup Feta cheese Crumbled
  • 1/2 cup Kalamata olives Pitted and whole
  • 2 cups Cooked quinoa or rice For serving
  • 1 cup Greek yogurt For tzatziki
  • 2 tablespoons Fresh dill Chopped

Method
 

Marination
  1. Marinate chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
Cooking Chicken
  1. Grill or pan-sear the chicken until cooked through, then slice.
Tzatziki Preparation
  1. Prepare the tzatziki sauce by mixing Greek yogurt, diced cucumber, minced garlic, lemon juice, and chopped dill.
Assembly
  1. In serving bowls, layer cooked quinoa or rice as the base.
  2. Top with sliced chicken, diced tomatoes, chopped red onion, crumbled feta, and Kalamata olives.
  3. Drizzle tzatziki sauce over the bowls and serve.

Notes

Use fresh ingredients for the best flavor. Let the chicken marinate longer for more flavor. Try different grains, such as farro or barley, instead of quinoa or rice. Chop your veggies small for a better bite in every scoop.
