Greek Chicken Bowls

Ingredients
  

For the Chicken
  • 1 lb chicken breast Marinated in olive oil, salt, and pepper
  • 2 tablespoons olive oil For marinating the chicken
  • to taste salt
  • to taste pepper
For the Bowl
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 medium bell pepper, diced
  • 1 medium red onion, sliced
  • 1 cup cooked quinoa or rice
  • 1/4 cup fresh parsley, chopped For garnish
For the Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • to taste salt

Method
 

Preparation
  1. Marinate the chicken breast in olive oil, salt, and pepper for at least 30 minutes.
Cooking
  1. Grill or bake the chicken until cooked through, then slice it.
  2. In a bowl, combine cherry tomatoes, cucumber, bell pepper, and red onion.
Making Tzatziki Sauce
  1. For the tzatziki sauce, mix Greek yogurt, garlic, lemon juice, and salt.
Assembly
  1. Assemble the bowls by placing a serving of quinoa or rice at the bottom, topped with the veggies and sliced chicken.
  2. Add a dollop of tzatziki on top.
  3. Garnish with fresh parsley and serve.

Notes

Serve warm or at room temperature. For added flavor, include feta cheese or olives. Store leftovers in an airtight container in the fridge for up to 3 days. Keep tzatziki sauce separate when storing.
