Noodles
  • 8 oz Lo mein noodles Fresh or dried egg noodles work well.
Chicken
  • 1 lb Chicken strips Boneless, skinless pieces cut into thin strips.
  • 1 tsp Salt Basic seasoning to taste.
  • 1 tsp Black pepper Basic seasoning to taste.
Vegetables
  • 4 cloves Garlic Fresh minced garlic for flavor.
  • 1 medium Red bell pepper Thinly sliced for color and sweetness.
  • 1 cup Snap peas Trimmed for crunch.
  • 1 cup Shredded carrots Adds color and light sweetness.
  • Green onions Chopped for a fresh garnish.
Sauce
  • 3 tbsp Soy sauce The savory base of the stir-fry sauce.
  • 2 tbsp Oyster sauce Adds depth and umami.
  • 1 tbsp Honey To balance the sauce.
  • 1 tbsp Sesame oil For nutty aroma and flavor.
Cooking Oil
  • 2 tbsp Vegetable oil For high-heat cooking.

Method
 

Cooking Noodles
  1. Boil noodles per package directions until tender. Drain well and set aside.
Cooking Chicken
  1. Warm a large skillet or wok over medium-high heat with oil. Once shimmering, add seasoned chicken.
  2. Sear chicken until browned and cooked through. Remove chicken and set aside.
Sautéing
  1. Add more oil if needed, then sauté minced garlic until fragrant, about thirty seconds.
Stir-Frying Vegetables
  1. Add bell pepper, snap peas, and carrots. Cook until just softened and still crisp.
Combining
  1. Whisk together soy sauce, oyster sauce, honey, and sesame oil, then return chicken to the pan. Toss with noodles and sauce until well coated.

Notes

Prep all ingredients before heating the pan. Use medium-high heat for a quick cook. Drain noodles well to avoid a soggy dish.
