Method
 

Preparation
  1. Pound or slice chicken breasts to even thickness and pat dry.
  2. Season both sides with salt, pepper, and any seasoning blend.
Cooking
  1. Heat olive oil in a skillet over medium-high heat until shimmering.
  2. Place chicken in the skillet and cook without moving until medium-golden, about 6-8 minutes.
  3. Flip and cook until chicken reaches a safe internal temperature (165°F).
  4. Remove chicken and let it rest on a plate.
  5. Deglaze the pan with white wine or broth, scraping browned bits.
  6. Add butter and stir until melted, then add garlic and cook until fragrant.
  7. Return chicken to the skillet, spoon sauce over each piece, and garnish with parsley.

Notes

Pound chicken to uniform thickness, keep it dry for better browning, and don’t overcrowd the pan to maintain temperature.
