Preparation
- In a skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat.
- Sprinkle the taco seasoning over the beef and add water as needed according to packet instructions.
- Stir in the cooked rice, and let it heat through for a few minutes.
- Lay out your tortillas on a flat surface.
Assembly
- On each tortilla, spread some sour cream, then top with the beef and rice mixture, nacho cheese sauce, shredded cheddar, shredded mozzarella, and chipotle sauce.
- Carefully roll up the tortillas, folding in the sides as you go, to secure the filling.
Cooking
- In a separate skillet, heat the butter or oil over medium heat.
- Place the burritos seam-side down and grill until golden brown on both sides, about 3-4 minutes per side.
Serving
- Remove from the skillet, slice in half if desired, and enjoy your Easy Grilled Cheese Burrito!
Notes
Serve warm with extra sour cream or salsa on the side. You can also add guacamole or fresh cilantro for an extra burst of flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat in the microwave or oven until warmed through.
