  • 1 cup Sliced bell pepper For texture and a sweet contrast to spice.
  • 1 cup Sliced onion For flavor and to soften in the slow cooker.

Method
 

Preparation
  1. Toss the chicken with olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear the chicken in a medium heat skillet briefly on both sides.
  3. Place the seared chicken in the bottom of the crock pot. Add sliced bell pepper, sliced onion, and minced garlic on top.
  4. Pour diced tomatoes with juices and chicken broth over the vegetables and chicken.
  5. Cover and cook on low for 4–5 hours or high for 2–3 hours until chicken is fully cooked.
  6. Remove chicken, shred with two forks, and return to the slow cooker.
  7. Stir in heavy cream and Parmesan until smooth and creamy.
  8. Prepare pasta to al dente, drain, and add to the slow cooker. Stir to combine and warm for another 15–20 minutes on low before serving.

Notes

Sear chicken for better flavor. Cook pasta al dente to avoid mushiness. Adjust spice levels according to preference. Mix well before serving and taste for seasoning adjustments.
