Preparation
  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Wash the cauliflower thoroughly and pat it dry. Cut it into bite-sized florets.
Cooking
  1. In a large bowl, toss the florets with olive oil, salt, pepper, garlic powder, smoked paprika, and red pepper flakes. If using parmesan, add it now.
  2. Spread the cauliflower in a single layer on the baking sheet, avoiding overcrowding.
  3. Bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.

  1. Serve immediately as a side dish, snack, or salad topping. Pair with dips like ranch, garlic aioli, or spicy sriracha mayo.
