Preparation
  1. Chop the chicken and vegetables into bite-sized pieces.
  2. Cook the lo mein noodles according to package instructions until al dente; drain and set aside.
Cooking
  1. Heat a large skillet or wok over medium-high heat. Add oil and sauté the chicken until golden brown and fully cooked, about 6-8 minutes. Remove from skillet.
  2. In the same pan, stir-fry bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
  3. Return the cooked chicken to the skillet with vegetables. Add lo mein noodles, soy sauce, sesame oil, and minced garlic.
  4. Toss everything together until well mixed.
