- Preheat your oven to 180°C.
- Cook the rotini pasta according to package instructions, then drain it.
- In a large skillet, brown the ground beef with chopped onion and minced garlic until the beef is cooked through.
- Add the taco seasoning and salsa to the beef mixture, stirring well to combine.
- In a large bowl, mix the cooked pasta with the beef mixture and sour cream until everything is well combined.
- Transfer the mixture to a baking dish, spreading it evenly.
- Top the casserole with shredded cheddar and Monterey Jack cheeses.
- Bake in the oven for 20–25 minutes, or until the cheese is bubbly and golden.
Notes
For a spicier version, add diced jalapeños or a dash of hot sauce to the beef mixture. You can use ground turkey or chicken for a lighter option and add more veggies like bell peppers or corn.
