  • 400 g ground beef Lean ground beef is recommended.
  • 250 g rotini pasta You can use any pasta shape.
  • 1 medium onion Chopped.
  • 2 cloves garlic Minced.
  • 1 packet taco seasoning About 28 g.
  • 400 ml salsa Use your favorite salsa.
  • 200 g sour cream For creaminess.
  • 200 g shredded cheddar cheese For topping.
  • 100 g Monterey Jack cheese For topping.

Method
 

Preparation
  1. Preheat your oven to 180°C.
  2. Cook the rotini pasta according to package instructions, then drain it.
  3. In a large skillet, brown the ground beef with chopped onion and minced garlic until the beef is cooked through.
  4. Add the taco seasoning and salsa to the beef mixture, stirring well to combine.
  5. In a large bowl, mix the cooked pasta with the beef mixture and sour cream until everything is well combined.
  6. Transfer the mixture to a baking dish, spreading it evenly.
  7. Top the casserole with shredded cheddar and Monterey Jack cheeses.
  8. Bake in the oven for 20–25 minutes, or until the cheese is bubbly and golden.

Notes

For a spicier version, add diced jalapeños or a dash of hot sauce to the beef mixture. You can use ground turkey or chicken for a lighter option and add more veggies like bell peppers or corn.
