Method
 

Preparation
  1. Step 1: Heat oil in a large skillet over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until soft.
  2. Step 2: Add the chicken pieces to the skillet. Cook until browned on all sides.
  3. Step 3: Stir in the rice, thyme, paprika, salt, and pepper. Cook for 2–3 minutes, mixing well.
  4. Step 4: Add the coconut milk and chicken broth to the skillet. Bring to a boil and stir.
  5. Step 5: Reduce the heat to low. Cover the skillet and simmer for about 20 minutes, until the rice is cooked and liquid is absorbed.
  6. Step 6: Remove from heat and stir in fresh lime juice before serving.
  7. Step 7: Top with chopped cilantro if desired and serve hot.

Notes

Use fresh ingredients for better flavor, don't skip browning the chicken, taste as you go to adjust seasoning, and let the dish sit for a few minutes before serving for improved flavor integration.
