- Step 1: Heat oil in a large skillet over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until soft.
- Step 2: Add the chicken pieces to the skillet. Cook until browned on all sides.

- Step 4: Add the coconut milk and chicken broth to the skillet. Bring to a boil and stir.
- Step 5: Reduce the heat to low. Cover the skillet and simmer for about 20 minutes, until the rice is cooked and liquid is absorbed.
- Step 6: Remove from heat and stir in fresh lime juice before serving.
- Step 7: Top with chopped cilantro if desired and serve hot.
