Method
 

Preparation
  1. In a small bowl, combine buffalo hot sauce and melted butter. Mix well and set aside.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add chicken pieces, seasoning with salt and pepper.
Cooking
  1. Cook the chicken for 5–7 minutes, or until it is browned and cooked through.
  2. Reduce heat to low and pour the buffalo sauce over the cooked chicken. Stir to coat the chicken evenly.
  3. Allow the chicken to simmer gently for 3–5 minutes to absorb the flavors of the sauce.
Assembly
  1. Add a base layer of cooked rice to serving bowls.
  2. Divide the buffalo chicken evenly atop the rice.
  3. Top with shredded lettuce, halved cherry tomatoes, and shredded cheddar cheese.
  4. Drizzle with dressing and garnish with green onions.
