Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth and free of lumps.
  3. Mix in rolled oats, cinnamon, honey or maple syrup, nut butter, salt, and vanilla extract until evenly combined.
  4. Transfer the mixture to the prepared baking pan, pressing it down evenly with a spatula.
Baking
  1. Bake in the preheated oven for 20 to 25 minutes, until the edges turn golden brown.
Cooling and Serving
  1. Remove from the oven and let it cool before slicing into bars.

Notes

Use ripe bananas for sweetness. Do not overmix to keep bars chewy. Store in an airtight container for freshness.
