2 boneless, skinless chicken breasts (about 6 oz each)

1 small zucchini, sliced

1 red bell pepper, chopped

1 cup broccoli florets

1 tablespoon olive oil spray

1 teaspoon garlic powder

½ teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

Juice of ½ lemon

1 tablespoon chopped parsley (optional garnish)

Instructions

1. Preheat your air fryer to 375°F (190°C) for 3 minutes.

2. Cut chicken breasts into 1-inch pieces and pat dry with paper towels.

3. In a bowl, combine chicken and vegetables. Spray lightly with olive oil and toss with garlic powder, paprika, salt, and pepper.

4. Place mixture in the air fryer basket in a single layer.

5. Cook for 12–15 minutes, shaking halfway through (the 20/20 rule) for even crispiness.

6. Check that chicken reaches an internal temperature of 165°F (74°C).

7. Drizzle lemon juice over the top, garnish with parsley, and serve hot.

Notes

To reduce calories further, skip oil and use a nonstick air fryer basket.
