Crispy, golden air fryer zucchini fries that are light, flavorful, and easy to make. A perfect healthy snack or side dish ready in under 20 minutes.
2 medium zucchinis, sliced into sticks
1 cup panko breadcrumbs
½ cup grated Parmesan cheese
2 eggs, beaten
½ tsp garlic powder
½ tsp paprika
Salt & pepper to taste
Light cooking spray
1. Preheat air fryer to 400°F (200°C).
2. Slice zucchini into evenly sized sticks and pat dry.
3. Beat eggs in one bowl; mix breadcrumbs, parmesan, and spices in another.
4. Dip zucchini into eggs, then coat in breadcrumb mixture.
5. Arrange in a single layer in the air fryer basket.
6. Lightly spray with oil and cook for 8–10 minutes, flipping halfway.
7. Serve hot with garlic aioli or marinara sauce.
Pat zucchini dry to avoid sogginess.
Use parchment liner for easy cleanup.
For frozen fries, cook 12–14 minutes at 400°F.
