2 lbs chicken pieces (thighs or drumsticks)
1 cup buttermilk
1 cup flour
2 tbsp cornstarch
1 tsp paprika
1 tsp garlic powder
1/2 tsp cayenne pepper
Salt & pepper to taste
Oil spray
1. Marinate chicken in buttermilk, salt, and spices for at least 4 hours or overnight.
2. Combine flour, cornstarch, and remaining spices in a bowl.
3. Dip marinated chicken in flour mixture, then back into buttermilk, then again into flour for a thick coat.
4. Preheat air fryer to 375°F (190°C).
5. Arrange chicken in a single layer, spray lightly with oil.
6. Cook for 22–25 minutes, flipping halfway and spraying again.
7. Let rest 5 minutes before serving.
For extra crunch, add a pinch of baking powder to the flour mix.
